As a child in Southern Mexico, Donaciano Valdovinos dreamed of becoming a chef. By age 16, he was working in the garden shed of Rancho Bernardo Inn, learning firsthand that the heart of every great dish is its ingredients. That garden soon led to the kitchen—and a lifelong career crafting bold, seasonal cuisine.

Chef Dona went on to sharpen his skills at culinary school and helm the kitchen at San Diego's iconic Humphrey's by the Bay for nearly two decades. Known for his refined coastal flavors and commitment to freshness, he joined the GRG family to bring his signature Italian-meets-California style to Nick & G's.

Today, Chef Dona creates elevated menus that celebrate the vibrant flavors of each season. His philosophy is simple: stay inspired, stay ahead, and never settle for anything less than exceptional.
